UK bakery GAIL’s is deploying new AI-powered technology to boost its security systems and operational efficiency across its more than 170 locations.

The bakery chain has partnered with cloud-based physical security specialist Verkada to deploy a new stack of video security cameras, access control, and air quality sensors to enable remote management of its retail storefronts and bakeries.

The technology aims to protect critical assets and reduce security investigation times, while also proactively improving employee safety and boosting operational efficiency and quality control.

Led by Brett Parker, property director at GAIL’s Bakery, commented on the installation: "The ability to remotely monitor our bakeries, track food preparation, and investigate incidents has delivered tangible benefits."

The move comes after the growth and expansion of the chain led to a lack of consistency in operational efficiency and security strategy. This made it increasingly complex to manage security and operations across multiple sites, with each site managing its own security system.

The new technology has addressed the inefficiencies of having varied security systems in each location.

“What impressed me most was the ability to access everything from my phone or desktop,” noted Parker. “We could finally manage all our locations in one place, which was a game changer.”

The technology also aims significantly reduce in investigation time by using AI powered search to speed up incident resolution, as well help to disprove fraudulent claims.

“We’ve been able to disprove fraudulent claims by providing clear footage of the incidents, saving us significant amounts in legal fees and settlements,” Parker said.

In terms of operations efficiency, it aims to boost team oversight, allowing remote monitoring of 75 per cent of floor space.

“Facilities managers can oversee multiple locations remotely, cutting down on travel time and improving response times to operational issues,” the firm said.
